DJ Sandee's College Recipes : Spicy Chicken Curry


Hello, I am DJ Sandee and welcome to my series called College Recipes where I will teach you quick, easy and cheap meals that you could prepare instantly and it will take you less than 15 minutes! 



Today I am gonna show you how you can make a wonderful dish of chicken curry that will give your local curry house a run for its money.

Ingredients :


  • Chicken (Preferably a half chicken cut to medium sized parts, do not use chicken breast meat alone because they tend to get dry. Leave the skin on if you want a more juicy and richer curry)
  • Onions - 1 large or 3 medium sized ones (Cut into thin strips)
  • Garlic and Ginger paste - (Puree 4 cloves of garlic with a thumb sized piece of ginger)
  • Ripe Tomatoes - 2 large or 4 medium sized (Diced)
  • 2 Red chilies (Diced) 
  • Coriander powder
  • Turmeric powder
  • Chili powder
  • Garam Masala powder
  • 2 Bay leaves
  • 1 whole star anise
  • Cumin seeds
  • A small stick of Cinnamon 
  • Good quality fresh cream or half and half 
  • Fresh Coriander leaves
  • Cooking oil
Method

Step 1 - Now, first of all you need to marinate the chicken for around 30 mins before or preferably the night before. Now for the marinade of the chicken add (before you add the spices heat up the spices listed below in a pan to make the aroma more strong for a better flavor)

  • 1 teaspoon of Turmeric powder
  • 1 teaspoon of Coriander powder
  • 1 teaspoon of Garam Masala powder
  • Half a teaspoon of Chili powder
  • A pinch of salt
Step 2 - To a non stick pan on medium heat add 4 tablespoons of oil (anytime of cooking oil) and fry the marinated chicken until they chicken is browned evenly on all sides and remove the chicken from the pan.

Step 3 - Without washing the pan with remaining oil from the chicken fat and the added oil add the star anise, cumin seeds, cinnamon and bay leaves to the hot oil and fry until the aromas arise. (it will smell so damn good!)

Step 4 - Fry the onions and chilies, when the onions have got soft add the tomatoes and fry until they the tomatoes have got soft.

Step 5 -  Add the ginger and garlic paste along with a little water to prevent the mix from burning and mix evenly

Step 6 - Add the fried chicken and mix it with the contents of the pan evenly along with 1 tablespoon of fresh cream of half and half and cook for around 9 to 10 mins until you see a layer of oil forming on top.

Step 7 - Add salt to your taste and the diced fresh coriander leaves. Mix the contents well and turn of the heat.

Step 8 - Serve with freshly cooked plain Basmati rice or Briyani or you can enjoy it with some chapati or naan.
